From the more genteel areas of Louisiana, this Cajun/Creole classic has been refined to be perfect for vegetarians: containing peppers, onions, tomatoes, beans and chillies, it’s enough to warm the heart and inspire you to take a trip to New Orleans! These curries do NOT include naan as they don’t seem to make sense with this dish.
